Gooseberry Patch: Meals in Minutes, 10th Anniversary Edition {giveaway!}

We have a bad time with supper in my house. I think it’s because about 5:00, we say ‘I’m hungry. What should we have for supper? We have chicken, shrimp, or pancakes.’ Oh, and did I tell you that my son often cries when we put him down? So now we have no thawed meat, one of us is holding Sam, and we’re all hungry.

Cue the meltdown.

So when Gooseberry Patch sent me the brand new – it’s so new you can’t even buy it yet!Meals in Minutes: 10th Anniversary Edition to review, I was really excited!

True to its title, most of the recipes are really quick to put together. The first one we made was No Bake Lasagna, and it was ready in less than 15 minutes!

In addition to the chapters of recipes, sweet tips and tricks at the bottom of each page, and those darling illustrations, Meals in Minutes includes Market Math. It’s so slick – you look up the ingredient and amount of it that your recipe calls for and how that translates into actual amount you need to buy. For instance, your recipe calls for 1 cup sliced apple, you should buy 1 medium apple. You need 1 1/2 cups graham crackers, you’ll use 21 squares. Like I said, slick!

Another bonus is the Perfectly Prepared Pantry list that’s included. Honestly, if your pantry is stocked with all these ingredients, you would be ready to make anything. This list is complete. And it totally shone a light on how un-perfectly prepared my pantry is =)

    Sounds like a book I could use! My go-to last-minute meal is scrambled eggs with PB toast and fruit. Ready in 5 minutes! Or, if I plan ahead, pepperoncini beef sandwiches (put a chuck roast and a jar of pepperoncinis in the crock pot, cook all day, and serve on toasted bread with cheese). I totally understand the dinnertime stress – it’s so much harder with a baby too! I usually am on my own with the baby and toddler while I make dinner, and I have about 30 interrupted minutes to get it on the table. It’s pretty crazy. Meal planning helps, although I can never stick with it. I’m going to try doing some freezer meals though onceamonthmom.com, which could help a lot.

    Oh — and it does get easier. :) When I just had the 3-yo, dinner prep was not much of an issue!

    My go-to meal is a toss-up between spaghetti with graziano sausage or Chicken Bulgogi (Korean marinated chicken) with brown rice and veggies. Both very easy and very yummy!

    I love this cookbook idea…My latest little meal is find 2 raw eggs. Drop them into a coffee cup that’s been sprayed with Pam stuff, add 2 tbsp of milk,stir. Put the cup in the microwave just 45 seconds. Stir it up a bit, then do it again for 45 seconds,put 2 tbsp or more of some cheese on top. I use Co-jack. (No not the cop). Salt & pepper it. Eat! Yum!

    I love baked chicken or turkey breast (leftover or just cooked to have on hand for this dish) shredded and warmed with Turkey Gravy made from a mix and poured over a Jumbo Hamburger Bun and served with a large green salad or broccoli florets. So easy and quick and I love it, have it often.

    My fast go-to lunch: 1 can chicken breast, handful of cranraisons, low-fat ranch dressing to consistency you like. This is sooo tasty and great with crackers.

    Mac N Cheese Casserole! 1 pkg Mac N Cheese made according to pkg directions; add: 1 lb hamburger (which has been browned w/ chopped onions and drained); 1 can corn, drained; 1 can cream of mushroom soup; and a small amount of milk to help mix it all together!

    My favorite go to quick dinner is a frozen diet pizza that I “nuke” in the microwave. Can’t beat it for fast, but i’s pretty much like eating warm cardboard :) I need this cookbook!!

    Anna, i always keep packages of smak ramen, ramen noodles (they have different names, the squiggly noodles with powder boullion, just add boiling water) in the pantry. I also almost always have a tea kettle hot or near boiling on the stove. My go to quick meal is the make the ramen noodles, more or less water, and add, cut up hotdogs,or leftovers,and/or velveta cheese for a quick ‘meal’ of sorts.     As a typical Minnesotan, my go-to meal (which, by the way, we’ll be having tonight) uses a cream soup! Egg noodles, cream of chicken soup, cheese, some milk and chicken. Delicious, and makes enough for lunch the next day!

    One quick to-go-to meal is my husband’s bbq. He makes a B-I-G batch in the spring, and packs it by the pound. I just pull a package out, thaw and heat in microwave. Put it on a hamburger roll with his quick slaw, and enjoy.

    I HAVE to get in on this giveaway…our simple and quick go-to meal is a fresh couscous (or sometimes we use quinoa) salad. It is very similar to the one you blogged about today, but with some different veggies (zucchini, red & green peppers, onion) and garbanzo beans and feta cheese – with evoo, lemon, and garlic. It’s so simple and quick that the hubby loves to make it too!

    Love your blog btw! :) This recipe is so easy and so yummy….

    Take desired # of boneless, skinless chicken breasts (in portion sized pieces)-and dip/roll them in Bisquick (place the Bisquick in a shallow dish~like a pie pan~and add a bit more as needed since you can’t put the Bisquick back in the pkg after it’s touched the raw meat… Coat the pieces well as this will make the yummy “crust”. Place pieces on a baking sheet and top each with a nice (not thin) pat of butter. Bake @ 350F about 1/2 hour-45 minutes depending on size of the chicken. Test with dig. thermometer to make sure chicky is done (@ 161F it’s done ~that is killer for Salmonella). It should also be a nice, golden brown. Serve with apricot “sauce” (apricot jam that has been warmed and thinned with a bit of orange juice). This is yummy with boiled potatoes or rice and a spinach salad that has oranges, cranberries, and toasted nuts with a raspberry vinagerette dressing…. mmmmm….. ♥ Laurie

    My go to meal is grilled cheese with turkey and tomato slices on sourdough. So yummy especially if you dip them in ranch dressing. :) My son though, prefers just plain grilled cheese. He’s a very plain boy when it comes to food lol.
