I am a horrible meal planner. Awful. I get totally overwhelmed by the schedule, grocery list, non-flexibility, and coupons. Oh, the matching of coupons to meal ingredients to days… I get totally overwhelmed, don’t plan meals and we eat scrambled eggs for dinner.

Leave it to Gooseberry Patch to help a girl (and her family) out! Their latest cookbook, Weeknight Dinners, has five chapters that are super helpful in simplifying meal planning:

They each include soups, sandwiches, mains, sides and desserts. Honestly? It’s like five mini-cookbooks in one. I’ve tried several recipes from each chapter, and they haven’t let me down. I’ll be sharing a few of them with you, and the sweet ladies from Gooseberry Patch have provided a copy of Weeknight Dinners to give to one of YOU!! Giveaway details are below. So far my family’s favorites are (links go to recipe posts): Rigatoni Bake, Cheddar-Dill Bread, Parmesan Pullaparts, Busy Night Taco Bake, White Chicken Chili, Herbed Parmesan Squash, Slow-Cooked Minestrone, Biscuit-Topped Chicken Pot Pie, and Buttery Scalloped Potatoes.

Tonight was Thursday, but we tried a Wednesday Italian Night recipe anyway, and good thing, because it is a winner!! Simple to prepare, ready in about 40 minutes from start to plate, and super tasty.

Linda’s Rigatoni Bake
from Weeknight Dinners
Gooseberry Patch

16oz- rigatoni pasta, uncooked
1lb ground beef or ground Italian sausage
26oz jar pasta sauce, divided
1 c. shredded Monterey Jack cheese
1 c. shredded Cheddar cheese
garnish: grated Parmesan cheese

Cook pasta according to package directions; drain. Meanwhile, brown meat in a skillet over medium heat; drain. Add pasta sauce, reserving 1/2 c. sauce. Simmer for 10 minutes. Spread reserved sauce in a 13×9 baking pan coated with non-stick vegetable spray. Layer with half each of pasta, meat sauce and shredded cheeses (I used a bag of Colby Jack instead of the separate two kinds); repeat layers. Sprinkle Parmesan cheese over top. Bake, uncovered, at 350 degrees for 30 minutes, or until hot and bubbly. Serves 4 to 6.
