Here in Minnesota, we’ve gotten snow every single day this week, which totally thrills me! I love snow. Love it. Doesn’t matter what time of day it snows, it gives me Christmas morning feeling. Is there anything better than cozying up by the fireplace, hunkering down indoors, while outside turns into a snowglobe?

Just add soup and I’m over the moon.

This recipe from Gooseberry Patch’s new Weeknight Dinners cookbook is so good that we’ve made it twice, brought it to our church annual meeting soup supper, and is easy enough that Husby is the one who put it all together!! He’s such a keeper, I tell ya. =) This recipe is found in the Meatless Monday section of Weeknight Dinners (though I think it’d be yummy to brown up some ground beef or turkey and toss it in, too). In addition to being simple to prepare and tasty to eat, cooking it in the crockpot made our home smell delicious and kept the oven free to bake rolls in.

Slow-Cooker Minestrone
Gooseberry Patch

4c. vegetable or chicken broth
28-oz can diced tomatoes
3 8-oz cans tomato sauce
3 c. water
2 c. carrots, peeled and sliced
2 c. celery, sliced
3 cloves garlic, minced
1 T. dried minced onion
1 T. dried basil
1 t. sea salt
1/2 t. dried oregano
1-1/2 c. rotini pasta, uncooked

In a large slow cooker, mix together all ingredients except pasta. Cover and cook on low setting for 7 to 8 hours. About 30 minutes before serving, stir in uncooked pasta. Turn slow cooker to high setting. Cover and cook an additional 30 minutes, or until pasta is tender. Makes 8 servings (it could say, ‘makes a gigantic amount of soup. Enough to eat for a week and also freeze.’ Because it does.)
